Erica has made sure that we have eaten very well while we've been 'roughing it' up here. Not everything has come from the garden, but we are moving in that direction as the plants begin to produce more and more. It has not been hard to incorporate all of our vegetables as all three of us like (and need) them. We've had a pretty wide selection for dinner, from mixed veggies to seasoned beets, and grande tacos to fried squash. Heck, we've even had tasty desert. Have a look below at what we've concocted!
